Ingredients
30ml Bombay Sapphire
15ml Cocchi Rosa
5ml Raspberry Eau de Vie
20ml Welsh raspberry cordial
20ml lemon
Foamer/egg white
This is Lab 22’s very own Welsh riff on a Clover Club. They take Welsh raspberries from Cardiff Market, and make a wonderful cordial from them by blending with pectolase, leaving it to work for 20 minutes, then straining the mixture through a muslin cloth to get a wonderful clear liquid.
A touch of malic and lactic acid, and some sugar, and you’ve got a delicious cordial which tastes like biting into a fresh raspberry.
Method:
Add Bombay Sapphire, Cocchi Rosa, Raspberry Eau de Vie, Welsh raspberry cordial, lemon and egg whites to a shaker to dry shake
Add ice and wet shake
Strain into Nick and Nora
Garnish with a raspberry
