20ml Sipello Aperitif
5ml Cherry Syrup

Fox and Chance released their new menu on the 21st of March. The menu is a change of pace for the team, but will still highlight what an amazing city Birmingham is. Two incredible local artists have designed the menu where they have sent Charlie (our fox mascot) on a day/night/very late night around Birmingham and its fantastic hospitality scene.
The menu is split by:

Light spritzes and fresh, longer drinks accompany him in the afternoon on the canals of Birmingham. The “Vine Dining” with Sauvignon Blanc, Stone Fruit Blend, Vermouth and Champagne

As Charlie gets snack-y, aperitifs join him. Liquid Gold is a Negroni-Lite with a wonderful British aperitif: Beefeater Gin, Sippelo, Muyu Vetiver Gris, Vermouth

Late night everything gets out of hand and Charlie’s dance moves come out. We had some fun creating elevated disco drinks that don’t take themselves too seriously. Bug’s Life is our disco drink milk punch: Plantation Rum, Melon, Discarded Banana Peel Rum, Coconut, Pineapple.
'With the recent Tik Tok trend we started thinking about our favourite sparkling red again (as if we ever stopped). A simple swap with the Prosecco wasn’t enough. We wanted to bring a depth to the dark fruit notes and soften the bitterness slightly. We made our own cherry syrup to add a subtle fruit note and Sipello, a British bittersweet aperitif, to bring a delightful soft bitterness and depth'.
Method:
Combine all ingredients, short stir and strain, top with sparkling red wine
