It is his first move into the standalone cocktail bar market.

Scottish-born Handling started his apprenticeship at the prestigious Gleneagles Hotel, in Scotland, at the age of 16. His cooking is all about celebrating the incredible produce he uses with his dishes packed full of flavour to really make those ingredients shine.

And the same approach is taken to the food offered at Eve which includes delicacies such as Cheese Doughnuts, Veal Tartare and Crab, Kimchi, tart.

Handling appointed renowned mixologist Sam Orrock as bar manager of the subterranean bar, which boasts the neon sign “Resist everything except temptation.”

The bar ethos is to utilise everything with no wastage, and it works with the Frog restaurant upstairs, using the by-products that can’t be used there within its drinks.

The innovative cocktail menu means there is a twist on the norm with the Pornstar Martini named as the Debbie Does Dallas. The Signature Collection includes creative cocktails such as All Killa No Spice using Disarmed chilli infused Russian Standard Vodka, mead, grape, bubbles and the Berlin Mule made with Dill infused Russian Standard Vodka, cucumber, ginger, bubbles.

The bar has something different to other cocktail bars. It installed a state-of-the-art drinks lab giving bartenders the opportunity to distil, carbonate and use as little-waste as possible. The lab equipment implements techniques to turn the waste into incredible cocktails.

In 2023, Handling was crowned BBC TV’s Great British Menu ‘Champion of Champions’. He was also selected by the BBC’s One Show as one of four British chefs to create an official recipe for the Coronation celebrations of King Charles III.
