Named after jazz pianist and composer Bill Evans' Waltz for Debby live album, this Japanese-styled bar was in 2025 and quickly became one of the city's hottest openings.
Jazz and nature are part of the inspiration here, offering its stellar drinks menu to all alongside a special list, only available to those at the 12-seat bar.
Drinks include a matcha Old Fashioned as well as a Bitter Gimley, made with Nikka Coffee gin.
