“Hey Palu is Edinburgh’s intimate modern Italian bar serving grown-up drinks accompanied by a killer playlist,” the bar’s website says.
“All of our drinks are influenced by the beautiful Italian aperitivo style of drinking; think relaxing in a sunny Italian piazza whilst sipping on a Negroni & people watching. It's no surprise that Amari, Bitters & Vermouths are our passion and feature throughout our drinks.”
Last year the venue, like many others, developed a range of home cocktail kits, but to ensure guests had the same Palu experience at home, Spotify playlists were created.
The menu is broken into several sections including aperitive, highballs, modern, modern classics, low/no, wines and amari.
The Aperitive section contains the usual suspects including the Gin Martini and the Negroni, but with the inclusion of some surprises such as the White Strawberry Negroni. However, as this is a specialist Italian cocktail bar, expect high quality vermouths to change up your usual understanding of these classics.
Modern cocktails have included the likes of the Pink Pigeon Club made using Roku Gin, preserved raspberry, strawberry, cranberry, lemon and aquafaba; the Smoked Banana Old Fashioned, made with Myers Rum, Jamaican rum, banana, tonka bean and Fernet Branca Smoke; and the Tiramisu! made using Buffalo Trace Bourbon, marsala, Averna Amaro Siciliano, espresso and mascarpone.
